This is what I got using the SBS install disk.
This is with Server 2008 R2 disk.
Get to Command prompt and run robocopy.
Chose all your favorite options and rescue that newer than backup data.
Decide on an image to restore.
Next.

Decide on time of backup.
Next.
Format and repartition, exclude disks.
The drive that you are restoring from is excluded by default.
You can highlight all you want but you can't change anything here.
Final Warning.
And there you go! Hopefully bootable in a somewhat reasonable time and as up to date as possible.
